Some good things just have to be shared, and this my friends is one of those recipes.
Recently Jamie Oliver was involved in a promotion for Land Rover in Brick Lane, London and this was the dish he served up for the visitors.

This was surprisingly quick to make and easily made sufficient bhajis for six people. In our version we used ciabatta rolls, home made cheddar cheese (I’ll tell you more about that in the future) and unsalted tortilla chips instead of poppadums, simply because we are in Nicaragua right now and the suggested ingredients are not available here, in other words…use your imagination too if you are lacking something mentioned in the original recipe.
The remaining bhaji mix kept well in the fridge until the next day when I cooked fresh again and served with salad, avocado, coriander yoghurt and fresh corn tortillas, a real mix of cultures, but so delicious!
